Reds Bistro recruits some Top Chef Canada manpower

Reds Bistro & Wine Bar has been a financial district institution since 2000, but the restaurant will soon undergo a significant rebranding. The current incarnation of Reds will close for renovations at the end of August, and if all goes according to plan, it will reopen three weeks later as Reds Wine Tavern.
In charge of the kitchen will be Top Chef Canada contestant Ryan Gallagher (ex-Ruby Watchco), who will replace chef Michael Steh. Gordon Mackie, meanwhile, will remain on board as the director of culinary development.
We tried to get some hints as to what the new menu will look like, but Paul Martin, general manager at Reds, would only say that it is “a work in progress.”
In terms of décor, the same design team responsible for the original Reds — McMillan Design — will be in charge of revamping the space.
Martin tells us that the new Reds will retain the brand’s dedication to wine, but will also feature a new cocktail menu and Caesar program from sommelier Jasmine Black.
