Toronto’s Best Sandwiches: a Wilco-inspired vegetarian offering from Sky Blue Sky

Smack dab in the midst of Koreatown’s barbecue joints and noraebang spots, Sky Blue Sky is a little bite of sandwich heaven. Named after a Wilco album, this second-storey eatery is the work of Wilco aficionado Chad Comfort. Likely to be found sporting — what else? — a band T, Comfort has extended his all-encompassing love for the group into the décor, the music and the sammies themselves, all of which are named after different songs.

An extensive menu offers up just as many meat-heavy sandwiches as ones suited to herbivores. Our pick of the litter is both a top sandwich and Comfort’s favourite song.

At Least That’s What You Said ($5) smothers slices of avocado and roasted red pepper between double layers of provolone. Tucked into some three-cheese white bread — baked in-house daily — and smeared with some Dijon-tinged basil pesto, the creation is warmed on a Panini press before it’s ready to go.

We just hope you like Wilco.
