As he always does, king of clubs Charles Khabouth made an incredibly beautiful restaurant. Patria is two floors with interesting lighting, a giant embroidered art installation and a tall wall of wine bottles. And his partner Hanif Harji ensures the impeccable quality of the piquant pleasures of southern Spain. Three-year-old cured ham is superbly nutty thanks to the acorns the black hoof free-range pigs ate; this is a carnivore’s dreamfood. Patria brings in artisanal wines and cheeses from Spain, and serves the cheeses at room temperature, with sweet/tart quince jelly and grilled oil-kissed baguette. Their Spanish blue is a farmhouse product that gives French Roquefort a run for its money. They do terrific tapas. Creamy/crisp manchego croquettes. Fab fresh house-fried artichoke chips turn a big salad into way more fun than veg ever are. Patria’s kitchen does the traditional foods of southern Spain but lighter and jazzier. Chickpeas stewed with spinach sounds ordinary but tastes exciting. Also very southern Spanish and more correctly cooked is fideos with clams and chorizo, short thin pasta stewed in spicy tomato broth, infused with smoke from chorizo, atop perfectly cooked fat clams.
