When the Splendido/County General partners split, owner/chef Victor Barry kept Splendido, to its benefit. Chef Tommy McHugh, who cut his teeth under Joël Robuchon in London, continues to do great work. Although you can ask for a la carte items, the official menu is now tasting — 5 courses for $75 or a multi-course tasting for $125. I don’t like having to ask to go a la carte. But chef McHugh is a man of gastro-complexities: He cleverly roofs exotic truffle agnolotti with espresso foam (!). His Irish organic salmon sashimi is East/West fusion incarnate, a great play on seafood with crispy rice, avocado and nori. And for the carnivore, there is a ruby red striploin marbled like an Italian cathedral, juicy like a starlet, and decorated with a carnival of flavours: sweetbreads, porcini puree and veal jus. For dessert chef makes miracles with warm white chocolate and shortbread.
