Zucca is neither hip nor hot but Andrew Milne-Allan at 66 is still a better cook than most of the young guys slinging BBQ and bourbon. His resto remains comfy and suave, the welcome warm. The lanky carrot-top does his own shopping every day and turns out fabulous Italiana. He makes the pasta from scratch and fills or garnishes it according to the season. In spring there are fava beans like sweet emeralds, local wild mushrooms and sweet baby peas, in fall sweet chestnuts with the gnocchi, and silken squash in perfect house-made tortelloni. He grills whole fresh Mediterranean fish perfectly, its skin crackling crisp, its flesh sweet and moist. His warm octopus salad is impeccably tender. His meats are always perfectly cooked and often with throwaway lines like pork with walnut crust or duck breast with shallot and quince agrodolce and savoy cabbage stuffed with farro, pancetta & apple. For dessert, his hazelnut meringue with bittersweet chocolate mousse, cream and espresso zabaione is irresistible.
