The beautiful French country cottage for the foie gras and truffle set, the Auberge is fiercely loyal to la grande cuisine — but with a marvelous light touch. Perfect sweetbreads are anointed with dried fruit and toasted hazelnuts in delicate coconut sauce. Très moderne! Big fat golden scallops pop flavour thanks to an emerald smear of broccoli couscous with a tiny cube of black truffle pudding (!!) and puckery yuzu sabayon. Drink the complex saffron-kissed bouillabaisse under the crispy Mediterranean sea bass with orange-scented fennel. And duck, that most French of fowl, gets some respect with super-crisp confit and fork-tender tea-smoked sliced breast and truffle jus. The service is as luxe as it gets, and in summertime the patio recalls la belle France. The dessert card needs some work.
