#15 La Cascina Ristorante

La Cascina Ristorante

Chef Luca Del Rosso is that rare guy who challenges himself every night to make an ever-changing menu composed mostly of the foods his grandmother made in Abruzzo. This is the countryside Italian cooking that many pretend to but few master, for it is deceptively simple but many-layered. Apparently plain but complex antipasti like beans with red onions and roasted squash with sweet peppers showcase chef’s talents. Chef woos us with his various wonderful home-made pastas, often scented with truffles. He sources meat from local farmers and cooks it with passion. Dinner is a long multi-course unfolding of a seductive story. Who cares if both location and room are anti-trendy? This is the real deal, Italian style.
