That Toronto should be renamed ramen-town few would dispute; and of all the ramen parlours in town, this is the classy one. It’s still ramen, but all the fixins are the finest — fab pork belly and shoulder, rich broth, the nori is crisp, the egg is perfectly poached rather than humdrum hard-boiled, and we love the sweet fish cake and cured cabbage. As for sides, maestro David Chang’s trademark cloud-like steamed buns with sweet pork belly, lightly pickled cucumber and hoisin are a Momo riff on Peking duck. We adore the kimchi stew, not too spicy orange broth with great taste and sweetness from pork shoulder and soft oval rice cakes. This NYC export takes limited reservations and has no backs on the seats. It’s all about turning tables.
