#51 The Carbon Bar

The Carbon Bar

Losing chef David Lee (to focus 100% on Nota Bene) hasn’t hurt the sultan of high end Hogtown BBQ. The long arm of Franco Prevedello is felt in the majesty of triple-height ceilings and the cleverness of bringing luxe to BBQ. They take reservations! The banquettes are comfy! You can talk above the music! They serve you — graciously. We love the chicken skin app, wherein kitchen alchemy gives us paper thin slices of fatty crunch. The menu nods to the East and healthy fads like kale, but resist. This is a meat palace. They slow-roast in a woodfire pit: Brisket like butter, meaty pink ribs with a hint of smoke and char on the outside, and the best southern fried chicken in town. Dessert is fun fantasia like cheddar ice cream sandwich and banana toffee cream pie.
