Some wonder why after all these years the un-hip trattoria still thrives. It’s because Andrew Milne-Allan is still a great Italian cook and the service is suave and warm. There is no kitchen in town more responsive to the foods of each season. Tender veg in summer, root veg in winter, baby greens in spring. And all with splendid pastas and seafood. It’s clear that chef is more in love with pasta and fish than with meat. His pasta mastery keeps growing, his ability to show noodles with deep rich flavours. He stuffs tortelloni and ravioli with the gifts of each season, he strews fresh al dente pasta off-cuts in fabulously complex daily soups. Fish is his other love, always perfectly cooked and garnished like a good dream. His meats are less exciting these days, perhaps less attractive to the maestro.
