New Sky

Subtle upgrades have taken New Sky up a notch — actual white tablecloths, porcelain statuettes in illuminated niches, and service now a more measured minuet than is normal on Spadina. I never order from the printed menu, but instead look to the specials on the whiteboards. The quaintly named steaming Vancouver crab with seafood fried rice in a steaming cage is Dungeness steamed crab with rice under it. The rice has been flavoured by the crab, the crab is superbly tender and sweet. They fry minced pork with green beans, ginger shards and some heat from XO sauce to great effect, and do al dente Chinese greens with the tang of oyster sauce. Their lobster with ginger and green onion is perfectly cooked, sweet and succulent. Very clean flavours here.
