In addition to the raucous izakaya experience and beautiful but comfy decor, Ryoji offers more than a dozen types of ramen, each with a unique house-made broth of great complexity. The traditional “shio” broth (made with chicken and pork) packs more flavours than either me or my bubby could into a clear liquid. “Tonkotsu” (pork bone) broth is richer, almost creamy and slightly sweet. Spicy miso is a thicker, ruby, umami concoction with a bit of a kick. Even their veggie broth has remarkable taste. The noodles are thin, eggy, and cooked to a perfect, chewy texture. Most of the ramen toppings are standard — too-fatty pork belly, meh rubbery fish cakes; but a couple that leave their mark are the falling-off-the-bone ribs and the gooey-yolked marinated soft boiled eggs. Skip the apps and sides and stick to the ramen, and if you have to get just one make it the special tonkotsu.
