Don't order from the English menu here, but instead use the point and shoot method: Look around at what the Chinese people are eating and ask the waiter to bring you what they're having. My favourite here is Dungeness steamed crab with rice under it. The rice has been flavoured by the crab, the crab is superbly tender and sweet. They fry minced pork with green beans and XO sauce to great effect, and do al dente Chinese greens with the tang of oyster sauce. Sweet BBQ pork, asparagus and peas jazz crispy Fu-Kin noodles. Their lobster with ginger and green onion is perfectly cooked, and they steam chicken and Chinese mushrooms in lotus leaf.
