

Small, noisy, cramped, and yet Sociale is one of the hottest tables in town. They made their name on fabulous house-made pastas with big strong sauces, and these days their street cred is stratospheric thanks to the presence of charcuterie wunderkind Grant van Gameren (ex Black Hoof). But Grant is not there to remake Sociale in The Hoof’s meat-crazed image. His influence is gentle: Smoked sweetbreads that he labours over for three days (soak, brine, sous-vide, smoke, marinate, grill). Fabulous buttery cabbage soup with rustic sausage. He sneaks house-cured meats like guanciale into pasta sauces for a grand flavour uptick.
