Apple-cinnamon waffles

Servings: 6 (3 waffles per person)
Ingredients:
  • 3/4 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • pinch salt
  • 1 cup low-fat milk
  • 2 tbsp vegetable oil
  • 1/4 cup egg substitute (or 1 large egg, lightly beaten)
  • Caramelized apples
  • 1 tsp vegetable oil
  • 3 tbsp packed brown sugar
  • 2 cups peeled and thinly sliced apples
  • pinch cinnamon
Directions:
  1. Combine both flours and the sugar, baking powder, cinnamon and salt in a medium bowl.
  2. In another bowl, whisk together the milk, oil and egg substitute. Add the egg mixture to the flour mixture and whisk together until well blended.
  3. Preheat a 6-inch waffle iron and lightly coat it with cooking spray. Spoon one-third of the batter over the waffle pan, covering it completely. Cook for 3 to 4 minutes or until the steaming stops; repeat this procedure with the remaining batter.
  4. Meanwhile, prepare the caramelized apples by adding oil and brown sugar to a small non- stick skillet over medium heat. Add apples and cinnamon and sauté for 2 minutes or until apples are just softened and glazed with sugar. Divide over waffles.
