Banana–chocolate chip loaf

Servings: Makes 1 loaf (8 slices)
Ingredients:
  • 1 large ripe banana, mashed (about 1/2 cup)
  • 1/4 cup vegetable oil
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup low-fat sour cream
  • 3/4 cup all-purpose flour
  • 2 tbsp whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/3 cup semisweet chocolate chips
Directions:
  1. Preheat oven to 350°F. Lightly coat an 8- by 4-inch loaf pan with cooking spray.
  2. Using a whisk or electric mixer, combine the banana, oil, sugar, egg, vanilla and sour cream in a large bowl until smooth.
  3. In another bowl, combine both flours, baking powder and baking soda. With a wooden spoon, stir the dry mixture into the banana mixture until the dry ingredients are just moistened. Fold in the chocolate chips.
  4. Pour into the prepared pan and bake for about 30 to 35 minutes or until a tester inserted in the middle of the loaf comes out clean. Let the loaf cool in the pan on a wire rack before removing loaf and slicing into 8 slices.
