Calamari and Plum Tomato Salad

Description:

Grilled calamari is the best way to serve this delicacy. I urge you to only enjoy the deep-fried versions on an occasional basis. This lightly grilled calamari goes well with the sweet grape tomatoes, bell peppers, olives and lemon olive oil dressing.

Nutritional value per serving: 192 calories, 15 g protein, 8.2 g carbohydrates, 1.6 g fibre, 11 g fat, 2 g saturated fat, 201 mg cholesterol, 394 mg sodium.

Ingredients:
  • 12 oz lb cleaned calamari
  • 3/4 cup sliced grape tomatoes
  • 1/3 cup diced red onion
  • 1/3 cup roasted red bell peppers
  • 1/3 cup diced black olives
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp crushed garlic
  • 1 tsp capers
  • 1 oz crumbled feta cheese
  • 1/8 tsp salt and pepper
  • 2 tbsp chopped parsley (for garnish)
Directions:
  1. In grill pan or barbecue sprayed with vegetable spray, grill calamari for 5 minutes, turning halfway, just until charred and no longer translucent. Let cool for 5 minutes then dice.
  2. In bowl add tomatoes, red onion, bell peppers, olives, olive oil, lemon juice, garlic, capers, feta, salt and pepper and squid.
  3. Place on serving plate garnished with parsley.
