Crustless crabmeat quiche

Description:

A crustless quiche is a way to eliminate the heavy fat crusts. There is so much flavour in this quiche, you'll never miss the crust.

Nutritional value per serving: 136 calories, 8 g protein, 6 g carbohydrates, 8 g fat, 4.1 g saturated fat.

Ingredients:
  • 2 tsp vegetable oil
  • 1 cup diced onion
  • 1-1/2 tsp crushed garlic
  • 3/4 cup diced zucchini
  • 3 eggs
  • 3/4 cup 2% milk
  • 1 tsp dried basil
  • 1/8 tsp salt and pepper
  • 3/4 cup grated havarti cheese
  • 1/4 cup diced sundried tomatoes
  • 3 oz diced crabmeat or surimi (imitation crabmeat)
Directions:
  1. Preheat oven to 350°F. Use 9 square baking dish sprayed with vegetable oil.
  2. In a large skillet sprayed with vegetable oil, add onion and garlic. Sauté for 3 minutes. Add zucchini and sauté for 3 more minutes or just until tender and lightly browned.
  3. In a mixing bowl combine remaining ingredients and add to the vegetables. Add to the baking dish and bake for 20 minutes or just until centre is cooked.
