Leading the Roncy renaissance, both Barque’s cooking and welcome have become increasingly assured. The world is beating a path to Barque’s door, thanks to chef and BBQ-meister David Neinstein. There are always crowds waiting outside, even though they take reservations. The ribs are fall-off-the-bone tender and smoky, thanks to the gargantuan smoker in the open kitchen. BBQ wings also come tender and smoky/sweet, as do dry rubbed baby back ribs. But my kingdom for Barque’s brisket! Twelve hours in the huge smoker turn briskets into moist, tender just-sweet-enough hunks of carnivore heaven. Sides are credible (especially the Cuban corn with cheese butter). Barque’s edible charms are enhanced by its distressed concrete ’n’ brick cool looks.
