They still do some grand things with pasta — but they no longer get it right every time: There are missteps like undercooked lentils with house-made sausage with too much sweet spice, and “toasted flour” spaghetti with bottarga and garlic that adds up to underpowered savour. We love the softness of tuna ceviche jazzed with oranges, and the creamed cauliflower filling in agnolotti is erotic, its lemon butter sauce spiked with pecorino and browned cauliflower bits … but its pasta has hard corners. They still do fab cardamom-spiked toffee pudding — but it is not as texturally perfect as in yesteryear. Still good, but where went great?
