Frank tries harder. He is the gifted amateur who bakes all his own – fabulous – breads and does things like truffles and honey to the butter he churns. He serves sangria sorbet for intermezzo and creamy beet veloute from a teapot (!!) for amuse. He makes all the pretty pottery bowls. And the free chocolate truffles. He weaves great ambitious flights of gastro-fancy and succeeds some of the time. His orange scented duck breast with crisp cocoa nibs is divine, its tiny veg bouquets adorable. His elk loin is rare and tender, its truffle-scented jus divine but the foie gras coat is too thick. We love the retro charm of oysters Rockefeller, but the hollandaise is sometimes broken by the broiler. The simpler he keeps it, the better.
