Hiro Sushi

Still, with cheap sushi joints as common as warts on a toad, Hiro is the maestro of raw fish. He sources impeccable fresh fish and treats it with utmost respect. Nobody else in town has such sweet big BC oysters, or gives them such complex benediction — seaweed, soy, vinegar and chili. Pine tree mushrooms, shrimp, tofu and chicken make superb broth. His sushi is smaller than elsewhere but much better: Belly tuna marbled like a great steak, raw sardine with grated young ginger, sweet Boston fluke, grilled salmon skin, raw scallops as sweet as sugar. But Hiro is a stubborn man. He works alone behind the sushi counter, and he will not hurry. The service is appallingly slow and borderline rude.
