It’s a ramen-centric world; so many ramen shops to choose from, so many opportunities to line up for a meal-in-a-bowl in noisy chaos. Kinton’s many virtues begin with its pork gyoza, fried crisp, redolent of ginger and garlic. But the gyoza are mere foreplay to the main event: Under $10 for long-stewed pork bone stock with great fixins. The noodles are al dente, the egg inflected with the taste of the stock, its yolk soft, the pork juicy. Those who eschew pork meat will favour the delicate vegetable ramen with carrot, corn, fresh al dente asparagus and scads of green onion. The room is charming, its walls covered in crosscut wood, its entertainment the frequent shouts of chefs in rapid motion in the open kitchen. Go at off hours or be prepared to line up.
