Pasta is a funny thing. We require it to be al dente, but hard is no good. There’s a sweet spot neither hard nor soft — yielding but firm. Very few chefs get it right. Which is why good luck getting a table at Local — because chef/owner Fabio Bondi has the best pasta moves in town. He stuffs ethereal tortelloni with squash and tops them with raw apples, lightens veal with mascarpone, inside pasta packets with an ultra-light sauce of butter, oil and parmigiano. He’s a dab hand at fish, veg and charcuterie too, but matters farinaceous at Local are downright erotic — and they keep getting more so every year. And hallelujah, they take reservations!
