Los Colibris

A serious Mexican restaurant, of the sort where people of means dine in Mexico. The room is a graceful remake of a hacienda and the cooking is quite fine. This is no picnic bench taqueria. Tortilla soup is a chile-kissed tomato broth with avocado, sweet fresh panela cheese, tortilla strips and fragrant coriander seedlings. Torta de elote is a fabulous sweet warm moist corn bread covered with pulled brisket in smoky chile adobo sauce dotted with sweet fresh corn kernels. We love chef’s pulpo a la parilla: Astonishingly tender (but not mealy) octopus braised in superlative raw green sauce made with basil, coriander and jalapeno. On the side are chef’s own corn tortillas, fragrant and warm. The tres leches cake is the best in town, creamy and moist. That and a tequila negroni will get you through the night.
