Standing in line in a cramped and drafty little shop that specializes in one kind of sandwich, you know why you’re at Porchetta: For the simple but sublime pleasure of chef Nick auf der Mauer’s warm sliced roast pork on a sourdough bun. This is pork with a pedigree. He takes fancy shmancy farmhouse pork, marinates it in sage, rosemary, lemon and garlic and then wraps it in prosciutto and pork belly and roasts it long and slow, so the sweet and savoury of the duet of sweet/salty porcine wraps can penetrate the flesh. He spritzes porchetta drippings on the bun, adds pork crackling, grainy house-made mustard and hot sauce to the meat, and it’s heaven on a bun. There are also remarkable sides: A great creamy bean soup jazzed with cabbage and bacon, and fabulous rapini with chili and onion.
