Dim sum so fresh you watch the dumpling being made behind a glass wall. Their trademark Shanghai-style soup dumplings (xiao long bao) are little steamed pockets of joy — put the whole thing in your mouth at once so you don’t loose any of the delicious broth that escapes when you bite through the delicate wrapper. My favourite are the plain pork ones — juicy, slightly pink meat simply accented with coriander — it’s almost a shame to mask any of their great flavor by dipping them in the ginger-spiked soy. They do other dim sum equally well. Pan-fried pork pockets are like scallion pancakes taken to the next level. Shanghai wontons come in a bath of spicy sauce (actually more flavour than spice) that will have you shamelessly slurping from the bowl. If you have room, finish your meal with the sweet black sesame dumplings.
