That Toronto should be renamed ramen-town few would dispute; and of all the ramen parlours in town, this is the classy one. It’s still ramen, but all the fixins are the finest — fab pork belly and shoulder, rich broth, the nori is crisp, the egg is perfectly poached rather than humdrum hard-boiled, and we love the sweet fish cake. As for sides, maestro David Chang’s trademark cloud-like steamed buns with sweet pork belly, lightly pickled cucumber and hoisin are a Momo riff on Peking duck. This NYC export takes limited reservations and has no backs on the seats but oh joy, they now take reservations.
