It’s matured into carnivore heaven, dry-aging beef till it melts in your mouth, making tasty charcuterie, and delectable sides. Wanna know where their passion lies? Look at the walls: Pics of meat cuts! Their sopressata and saussicon sec are dry salamis, each spiced differently, both as addictive as Lays chips. Even haters of boudin noir (blood sausage) will be converted by the mellow soft sausage. The Ontario burrata is also very fine — about as creamy as it gets. But the big deal here is côte de bœuf — steak sliced from the rib, with the rib bone attached. It’s only served for two, will set you back over a hundred bucks (depending on the market price), and it’s incredibly flavourful — and tender. Aged in the walk-in cooler, super-marbled, served with roasted marrow to slather on top and fresh grated horseradish on flat-leaf parsley to spike the meat. Deeply sexy.
